Campsite cooking: Classic chilli cheeseburger

Our current mantra is waste not, want not.

So, if you followed our recent recipe for chilli non carne and you’ve got some left over in your camping coolbox, we’ve come up with the perfect way to use it – as a topping for home-made burgers.

The secret ingredient here is Henderson’s Relish, which lifts this dish to another level

Ingredients (serves 4)

  • 500g beef mince
  • Leftover chilli
  • 4 slices Monterey Jack cheese
  • 15ml Henderson’s Relish (or Worcestershire Sauce)
  • 1 large shallot
  • Salt and pepper
  • 2 large tomatoes
  • 1 little gem lettuce
  • 1 red onion
  • 8 pickled green chillies
  • 4 bread rolls
  • 200g bag salted tortilla chips

Cooking instructions

Step 1:

Finely dice the shallot and add to a bowl with the beef mince and Henderson’s Relish. Season generously with salt and pepper. Mix together with your hands (make sure you wash them first!) until it’s thoroughly combined. Divide the mixture into four equal amounts and then form into round patties.

Step 2:

Cook the patties on a medium/high heat grill for three to four minutes on each side, until they are nicely browned.

Place one cheese slice on each patty and put a loose-fitting lid over the burgers for about three minutes, or until the cheese melts.

Meanwhile, thinly slice the tomato and red onion and heat up the leftover chilli until it’s bubbling.

Step 3:

To build the burger, slice the buns in half and squeeze some ketchup and mayonnaise onto the bottom part.

Then add a lettuce leaf, a few slices of onion and tomato, two chillies and the burger and cheese.

Finally, spoon on some leftover chilli and place the bread roll lid on top.

Step 4:

Serve with tortilla chips and any remaining salad on the side.

 

Top tip:

Use Worcestershire Sauce if you can't find Hendersons Relish locally
