Masterchef contestant cooks up at Plas Coch

Jackie Kearney, a top 4 semi finalist in BBC One’s Masterchef 2011 spent much of her childhood family holidays caravanning in Anglesey, so she had no hesitation in accepting an invitation to work with Executive Chef Martyn Gibbon at the island’s five star Plas Coch Holiday Home Park

Jackie, who is from Manchester, is passionate about regional Asian dishes, street food and vegetarian dining, inspired by her extensive travels across Asia with her husband and twin children.

Though a vegetarian, Jackie still works with fish and meat to provide fabulous creations for every palette, as she did during the Masterchef competition.

“It was so lovely that so many of the holiday home owners at Plas Coch, and local people as well, recognised me and wanted to talk to me about food,” said Jackie.

“I received such a warm welcome from everyone on Anglesey and I look forward to returning very soon, and creating some more dishes with the fabulous local produce such as the amazing seafood. I think my personal favourite is the smoked Anglesey seasalt – a really delicious ingredient!”

Dean Styger, Managing Director of Plas Coch, said he was delighted when Jackie accepted the invitation to cook at the park.

“The aromas alone leaving our kitchen were mouth watering and the food delicious and inspirational,” he added.

“Our executive chef Martyn Gibbon and his team enjoyed the opportunity to work with Jackie who, in turn, has worked with a number of highly regarded chefs in the UK, including Yotam Ottolenghi and Atul Kochher.”
