Caravan cookery with Monica Rivron and Bailey: Part 5

Everyone loves good food. Monica and Rowland are one of the best tag teams for tasty treats out there, especially when it comes to cooking in a caravan.

Caravan magazine has teamed up with The Rivrons and Bailey Caravans once again to bring you a stomach full of speedy snacks. What's the catch? You have to cook them yourself. But don't worry, it's easy!

Spinach and feta filo wrap
 

These parcels may seem a little daunting to make, but it’s an easy and fun 10-minute meal, that gives a lovely crunch from the pastry and the bacon.

 

Ingredients

4 slices bacon, chopped
100g spinach
100g Feta cheese
50g walnuts, chopped
8 sheets Filo pastry
100g melted butter

 

Preparation

Pre-heat the oven Gas 6/200°C.

Start to fry the bacon in a frying pan. Wash the spinach in a colander and, when the bacon starts to turn golden, add the spinach.

When all the water from the spinach has gone and the spinach is completely wilted, remove from the heat.

Tip the walnuts and crumble the Feta into a bowl. Add the spinach and bacon.

Flour your counter and place two whole sheets of filo on it, horizontal to you. Put a portion of the mixture in the middle of the filo, just in from one end, and fold a third over it from the bottom edge nearest you. Paint the long edge of the far side with melted butter before folding it back over the first third and ‘gluing’ it down.

Now, fold the right corner up and across to start forming a triangle. Continue to fold over creating a tightly-packed triangle.

Put all the little parcels on a baking tray, paint with butter and bake in the oven for 15 minutes.

Serve hot or cold with minty yoghurt (a small tub of Greek yoghurt, chopped mint leaves and diced cucumber).
