Cooking in a caravan: French Onion Soup Recipe

Monica Rivron's latest recipe for our 'Cooking in a Caravan' series is 'French Onion Soup'.

I love this soup; it reminds me of my childhood. Make it when you want to create that 70’s bistro-feel in the caravan!

Ingredients Monica Rivron

  • 1 onion
  • Two cloves of garlic
  • 50g butter
  • 1 tbsp flour
  • 1/2 tsp mustard powder
  • 1 litre of stock
  • 50 g Gruyere cheese
  • French bread

Recipe

Slice the onion (do this at home, if you want to keep the smell out of the van), melt the butter in a pan and slowly cook the onion and garlic.

You want the onion to soften and go a lovely golden brown.

This should take about 15 minutes.

Then stir in the flour and the mustard powder, add the stock and stir until boiling. Season and simmer for about 10 minutes.

Meanwhile, heat the grill and slice some Gruyere cheese. Cut the French bread into nice thick slices about 4cm; you want at least two each, put the cheese under the grill and cook until the cheese is nicely melted and just turning golden. Only cook the cheese side.

Finally, put into the serving bowls and pour the soup over the top.
