10 top tips for better barbecue cooking on your camping trips
1 Light up. Use a chimney starter to effectively light and measure out the correct amount of fuel.
2 Keep your lid on. With the Lid-on and vents open you can use your barbecue like a fan-assisted oven to roast, bake and grill.
3 Cleaning made easy. Fire up the barbecue to full heat and ‘burn off’ the cooking grate. Once the residue has dried and carbonised, brush it clean with a T-brush.
4 Direct cooking. Great for foods that typically cook in less than 15 minutes, the heat source is positioned directly underneath the food.
5 Indirect cooking. For larger joints of meat, desserts and biscuits, the heat source is to the side of the barbecue and the food is placed in the central safe zone.
6 Turn food once. Food loses moisture when turned. Sear food on both sides over direct heat before sliding to an area of indirect heat.
7 Is it cooked? A reliable temperature probe gives you confidence to serve properly cooked food.
8 Add flavour. Use soaked woodchips to add a new flavour dimension to your food.
9 Healthy option. Fats render, fall through the bars or onto the coals and vaporise.
10 Have Fun. Experiment with your own recipes, add your own flavours.
