Campsite cooking: Minestrone soup
There's nothing better on a chilly autumn day than a warming bowl of soup.
This Italian-style dish is packed with flavour and makes a quick and easy campsite lunch with crusty bread. Or fill up a flask and take it with you on a walk in the hills
Ingredients
- 1 tin of tomatoes
- 2 handfuls of orzo pasta (or any small pasta)
- 2 small potatoes
- 2 small carrots
- 1 small courgette
- 1 leek
- 1 crushed garlic clove
- 1 tsp oregano
- 2 tsp sugar
- Olive oil
- Salt and pepper
- Splash of red wine vinegar (optional)
Cooking Instructions
Step 1:
Dice all the vegetables to as small a size as possible for quicker cooking.
Add all the vegetables, garlic, oregano and a glug of olive oil to a large pan and sweat gently over a medium heat for five minutes.
Step 2:
When the leeks have softened, pour in the tinned tomatoes.
Fill the tomato tin with water and pour that in as well. Season generously and add the sugar and vinegar, if required, at this point. Cook for five minutes.
Step 3:
Add the pasta and simmer for around 15 minutes until the pasta and the rest of the vegetables are soft.
Serve in a bowl with a hunk of crusty bread or pour into a flask for taking out onto the hills.
Top Tip:
For an even more hearty soup, add chicken, Italian sausage or chorizo when you are sweating the veg. Fry the meat until lightly browned and allow to cook through with the pasta and veg.
