Campsite cooking: Lamb curry

There’s nothing better than the delicious aroma of a freshly cooked curry wafting over the campsite.

Everybody should have a curry in their campsite cooking armoury and you simply can’t go wrong with this foolproof recipe. Because you’re creating it from scratch, you can make it as hot as you like.

  • 1kg diced lamb
  • 1 tin chopped tomatoes
  • 2 green chillies
  • 4 garlic cloves
  • 1 large onion
  • 1.5 tsp salt
  • 1.5 tsp ground black pepper
  • 1.5 tsp ground coriander
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • 1 tbsp vegetable oil
  • 0.75 tsp garam masala
  • 0.5 tsp chilli powder
  • Thumb-sized chunk ginger
  • 300g Basmati rice
  • Bunch fresh coriander

Cooking instructions

Step 1:

Finely chop the onions and gently fry in a saucepan with the cumin until soft.

Add ginger, chillis, garlic and spices and cook briefly over a low heat, being careful not to burn the garlic.

Step 2:

Place the diced lamb into the pan and coat well with the spice and onion mixture.

Add the tin of tomatoes to the pan, then fill the empty can with water and pour it into the pan, too.

Step 3:

Cook for 20-30 minutes until lamb is tender and the sauce thickened.

Step 4:

Put the rice in a pan with water, bring to the boil then simmer for 10 minutes or until cooked.

Just before serving, chop the coriander and add to the curry pan, then dish up with the fluffy rice.


Top tip:

Use beef, chicken or a veggie alternative if you don't fancy lamb
